2015 WILD Pinot Noir Tasting Note
Colour: Deep Burgundy
Aroma: Strong varietal characters of dark plums, mulberry, fruits of the forest and earthy overtones.
Palate: The bouquet leads to a palate of rich, velvety, ripe red fruits. The plentiful finely integrated tannins deliver opulence that rounds out the lingering finish.
The vineyard was planted in 1988 on gravelly iron-stone and basaltic clay soils. The frost-free and breezy location reduces vigour and fungal diseases. Drip irrigation is used to sustain the vines through the heat of Summer. Towards the end of the season the vines are encouraged to rely more on seasonal rain. The vineyard is managed with sustainable practices, including minimal applications of natural fungicides. Bud-burst occurs in mid to late August, flowering in early December to Christmas, with verasion in early to late February. Grapes are not harvested until the optimal complexity for the season has been reached, typically from late March to April.
The wine has been hand-harvested and crushed directly into open vats. Acid is added to adjust pH as required and sulphur dioxide is added to encourage the desirable fermentative wild yeasts to dominate. The traditional technique of hand plunging occurs throughout the primary ferment of three weeks. Once complete, the fermenters are sealed and heated to 30 degrees and allowed to macerate. The wine is pressed when the tannins fill the palate and is racked to old oak barrels for 12 months prior to bottling.
